My coufounder backed out when he saw how much compliance and legal work there would be needed to operate in the US(I wanted to go with EU first).
I'm an engineer(ex Stripe[project lead], a founding dev at p2p crypto exchange), I've recruited and managed teams/projects before.
I'm looking for next project to work on where I could join as ops/manager/head of product or something like that.

This is an impressive background and you've single handedly navigated the most complex phases of early-stage startup building. Well, your cofounder backing out isn't a failure on your part it's a powerful filter that revealed your resilience and their risk tolerance. Many great founders hit a similar wall at some point but somehow pivot.
I think you should focus on companies where your specific pain points are their current priorities but ensure that they are well funded startups in the fintech, DeFi, or infrastructure space. Lastly you can apply to jobs on other places like LinkedIn, while sending emails or pitch to potential employees.
