If you put some numbers in an excel spreadsheet, you can plot the price of xem and bitcoin over a period of time.
Let's say you assume both bitcoin and xem gain 2% every 7 days (1 week).

You'd end up with a $1,01 XEM price for 1 Xem in about 82~85 weeks, depending on where you start with the current prices.

Is a 2% weekly grow in Crypto possible? Long term?

what? 2-3 years isn't that long if you forget it for now. i forgot my litecoin for years and suddenly its now $15 i could believe i dump some of mine when it was just $5. i still have some more of it though. i can imagine how much it can be after 3 years. i will be bragging again when it hit $1.

I was about to set up delegate harvesting but I learned I need about 10K nem. Right now I only have 4k+ XEM. I will be buying more to have some but this is delegate harvesting.  How do we earn fees?

You earn transaction fees if you solve a block. Sometimes there are blocks with 0 fee and sometimes you get lucky and hit a block with a large fee. The more NEM you have delegated, the higher the chance of hitting a block

That's not NEM's fee. That's the fee from the exchange. I'm guessing it was poloniex? They have a flat 15 xem withdrawal fee. So, write poloniex to lower their fees
